The greeks call this Tzatziki, and use it as a sauce for souvlaki; the Turks, just the other side of the Aegean Sea, call it Cacik, and eat it as a soup. We add a half-teaspoon of white vinegar to keep it thin if we're making soup. It should be eaten icy-cold on a really hot day.
1 cucumber
1 cup fresh yoghurt
Some mint leaves
Salt to taste.
Method :
1. Peel and grate the cucumber.
2. Mix into the yoghurt and optional vinegar.
3. Chill the soup.
4. This soup is ideal for the hot summer, it's tasty, easy to make. Good for your skin!
